Ok, took a bit of work to figure this out. Analysis here:

I think the bug fix is straightforward.

When I try to send a message whose from field contains unicode characters (for example cyrillic characters), I get this error:

mhbuild: missing mailbox (�): Тестирање <name@examp
mhbuild: Unable to encode header "From"
/usr/local/Cellar/nmh/1.7.1_1/bin/mhbuild: exit 1

This is a test message I'm trying to send.

To: Someone Else <someone.else@example.com>
cc:
Fcc: +outbox
Subject: Subject

I'm running nmh 1.7.1 on macos Big Sur. Here is the full output of mhbuild -version.
