We already have a math app, that could do the things you talk about and more (CAS, interactive geometry,...) and it is Giac/Xcas. Have you tested it? Could you use the mailing list to discuss this questions? Thanks.

GNU Octave is an excellent scientific program. Similar to Matlab, though without some of the toolboxes :-(

Still, there are lots of add-ons to octave (I personally have used the control system addons, and a graphing addon.. I forget which one but there is an excellent graph-producing addon for octave thats much better than default)

octave runs in text-mode if you want it to, and it does everything your TI-89 can do and much much more :-)
