I could have even found it by searching for the word sshfs on the --help output.

Yes, use options --archiveTypes and --specialTypeArchiver to store those files individually in tar or cpio files.
You may also use option --exceptTypes to exclude some types of special types from the backup.

Does storebackup support storing/restoring device nodes when using file systems which doesn't support them for backup storage?
