During a group meeting we discussed if somehow the SFIT routine of IDL can be of help in the implementation of the surface fitting. Information about this function can be found here: https://www.l3harrisgeospatial.com/docs/sfit.html
The good news is that efforts to implement such 2D polynomial fits are ongoing. The low-level things are very similar to the 1D fits we already have in Statistics: https://www.gnu.org/software/gnuastro/manual/html_node/Least-squares-fitting.html
