if you don't like the methods you describe, the alternative is to use the context menu avabilable for a selected message.
Right-click or on the message view and a specific menu appears where you can move or copy your message.

GNUMail 1.2.3 on Debian sid does not have a 'move message to folder...' button in the toolbar or the menus.

To my knowledge only two ways to move messages are available: drag and drop, and cut and paste. Having a 'move message to folder...' dialog or a drop down with list of folders would be a nice shortcut to have.
